Feta Orzo & Broccoli with Lemon Vinaigrette

Description

1 cup orzo pasta
½ cup feta cheese, crumbled
¼ cup dried cherries, chopped
1 cucumber, diced
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 tsp dried oregano
Salt and black pepper to taste
¼ cup fresh parsley, chopped
Directions:
Cook the orzo pasta according to package instructions, drain, and let cool.
In a large bowl, combine the cooled orzo, feta cheese, dried cherries, cucumber, cherry tomatoes, and red onion.
In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and black pepper.
Pour the dressing over the salad and toss until evenly combined.
Garnish with fresh parsley and serve chilled or at room temperature.
