Feta & Cranberry Penne Salad with Orange Vinaigrette

Recipes:

1 cup orzo pasta
1/2 cup dried cranberries
1/3 cup goat cheese, crumbled
2 cups fresh arugula or baby spinach
1/4 cup toasted pecans, chopped
1/4 cup red onion, finely sliced
1/4 cup cucumber, diced
Honey Balsamic Dressing:
3 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp honey
1 tsp Dijon mustard
1 garlic clove, minced
Salt and black pepper to taste
Directions:
Cook orzo according to package instructions, then drain and rinse under cold water to cool.
In a large bowl, combine the cooked orzo, dried cranberries, goat cheese, arugula or spinach, toasted pecans, red onion, and cucumber.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and black pepper.
Pour the dressing over the orzo salad and toss gently to coat.
Let sit for 10 minutes to allow flavors to meld.
Serve chilled or at room temperature. Enjoy!
