Description
For the Salad:
1 cup orzo pasta
½ cup dried cranberries
½ cup crumbled feta cheese
½ cup chopped walnuts, toasted
1 cup fresh spinach, chopped
1 small red onion, thinly sliced
For the Orange Honey Dressing:
2 tablespoons olive oil
1 tablespoon honey
1 tablespoon orange juice
1 teaspoon orange zest
½ teaspoon Dijon mustard
Salt and black pepper to taste
Directions:
Cook the orzo according to package instructions. Drain and rinse under cold water to cool.
In a small bowl, whisk together the olive oil, honey, orange juice, orange zest, Dijon mustard, salt, and black pepper to make the dressing.
In a large bowl, combine the cooled orzo, dried cranberries, crumbled feta, chopped walnuts, spinach, and red onion.
Pour the dressing over the salad and toss to coat evenly.
Serve chilled or at room temperature.
