For the Tortellini:
12 oz fresh spinach and ricotta tortellini
1 tablespoon salt (for boiling water)
For the Brown Butter Sage Sauce:
4 tablespoons unsalted butter
6 fresh sage leaves
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes (optional)
¼ cup grated Parmesan cheese
1 tablespoon lemon juice
Directions:
Bring a large pot of salted water to a boil. Cook tortellini according to package instructions, then drain and set aside.
In a large skillet over medium heat, melt butter. Add sage leaves and cook for 2-3 minutes until the butter starts to brown and the sage crisps.
Stir in minced garlic, salt, black pepper, and red pepper flakes. Cook for another 30 seconds until fragrant.
Remove the skillet from heat and stir in lemon juice.
Toss the cooked tortellini in the brown butter sage sauce until well coated.
Serve warm, garnished with grated Parmesan cheese.
