Feta and Cranberry Orzo Salad with a Fresh Lemon Twist

Description

8 oz pasta (penne or rotini work well)
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/4 cup kalamata olives, pitted and sliced
1/4 cup green olives, pitted and sliced
1/2 cup feta cheese, crumbled
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped
Directions:
Cook the pasta according to package instructions. Drain, rinse with cold water, and set aside to cool.
In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
Pour the dressing over the salad and toss gently to combine.
Garnish with fresh parsley and serve chilled or at room temperature.
