For the Meatballs:
1 lb ground chicken
½ cup grated Parmesan cheese
¼ cup breadcrumbs
1 egg, lightly beaten
2 cloves garlic, minced
1 teaspoon lemon zest
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil (for cooking)
For the Garlic Orzo:
1 cup orzo pasta
2 tablespoons unsalted butter
2 cloves garlic, minced
2 cups chicken broth
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried thyme
¼ cup grated Parmesan cheese
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
Directions:
In a bowl, combine ground chicken, Parmesan, breadcrumbs, egg, garlic, lemon zest, oregano, salt, and black pepper. Mix until well combined.
Shape mixture into small meatballs.
Heat olive oil in a large skillet over medium heat. Cook the meatballs for 8-10 minutes, turning occasionally, until golden brown and cooked through. Remove
from the skillet and set aside.
In the same skillet, melt butter and sauté garlic for 30 seconds.
Add orzo, stirring to coat in butter. Pour in chicken broth, salt, black pepper, and thyme. Simmer for 10-12 minutes, stirring occasionally, until the orzo is
tender and most of the liquid is absorbed.
Stir in Parmesan, lemon juice, and fresh parsley. Remove from heat.
Serve meatballs over garlic orzo, garnished with additional Parmesan and parsley if desired.
