Salt and black pepper, to taste
Directions
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and black pepper until well combined.
In a large salad bowl, combine baby spinach, feta cheese, dried cranberries, toasted nuts, red onion, and apple slices (if using).
Drizzle the lemon dressing over the salad and toss gently to combine.
