Easy and Delicious Slow Cooker Cassoulet

Ingredients

1 lb chicken thighs, boneless and skinless, cut into chunks
4 slices bacon, chopped
1 smoked sausage or kielbasa, sliced
2 cans (15 oz each) cannellini beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
1 medium onion, diced
3 cloves garlic, minced
1 cup chicken broth
1 tsp dried thyme
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 bay leaf
Directions

In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, leaving the drippings in the pan.
Brown the chicken pieces and sausage slices in the bacon drippings for 2-3 minutes per side. Transfer to the slow cooker.
Add the cannellini beans, diced tomatoes, onion, garlic, chicken broth, thyme, smoked paprika, salt, pepper, and bay leaf to the slow cooker. Stir to combine.
Cover and cook on LOW for 6-8 hours or HIGH for 4 hours, until the chicken is tender and the flavors have melded together.
Before serving, remove the bay leaf and sprinkle the crispy bacon on top for added flavor. Serve warm with crusty bread or a side salad!
