Recipes:

1 cup couscous
1 1/4 cups boiling water
1/2 cup feta cheese, crumbled
1/3 cup dried cranberries
1/4 cup pomegranate seeds
1/4 cup toasted almonds, sliced
1/4 cup fresh parsley, chopped
2 tbsp red onion, finely diced
1/2 tsp salt
1/4 tsp black pepper
Pomegranate Vinaigrette:
3 tbsp olive oil
2 tbsp pomegranate molasses
1 tbsp balsamic vinegar
1 tsp honey
1/2 tsp Dijon mustard
Salt and pepper, to taste
Directions:
Place couscous in a large bowl and pour boiling water over it. Cover and let sit for 5 minutes, then fluff with a fork.
In a small bowl, whisk together the olive oil, pomegranate molasses, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
Add the crumbled feta, dried cranberries, pomegranate seeds, toasted almonds, parsley, and red onion to the fluffed couscous.
Drizzle the vinaigrette over the salad and toss to combine.
Serve immediately or chill for 15 minutes before serving for enhanced flavors.
