Detox Chicken and Vegetable Soup
Ingredients
1 tbsp olive oil
1 small onion, diced
2 carrots, sliced
2 celery stalks, diced
3 garlic cloves, minced
6 cups chicken broth
2 cups shredded cooked chicken (rotisserie works great!)
1 zucchini, diced
1 cup broccoli florets
1 cup cauliflower florets
1/2 tsp dried thyme
1/2 tsp dried oregano
Salt and black pepper to taste
Directions
Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook for 5-7 minutes until softened.
Build the soup base: Stir in chicken broth, thyme, and oregano. Bring to a boil.
Add veggies and chicken: Add zucchini, broccoli, cauliflower, and shredded chicken. Reduce heat and simmer for 10-12 minutes, or until vegetables are tender.
Season: Adjust seasoning with salt and pepper to taste.
Serve: Ladle soup into bowls and enjoy warm. Perfect for a light, healthy meal!
