Decorative Sandwich Cookies
Ingredients:
For the Cookies:
2 1/2 cups all-purpose flour
1 cup unsalted butter, softened
1 cup powdered sugar
1 tsp vanilla extract
1/2 tsp salt
For the Filling:
1 cup caramel sauce
1/2 cup buttercream frosting
For the Decoration:
Royal icing (white)
Caramel drizzle
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream together butter, powdered sugar, and vanilla until fluffy. Gradually mix in flour and salt until a soft dough forms.
3. Roll out the dough to 1/4-inch thickness and cut out rounds using a cookie cutter. Place on the baking sheet.
4. Bake for 10-12 minutes or until edges are lightly golden. Let cool completely.
5. Spread caramel sauce on half of the cookies and sandwich with the remaining cookies.
6. Decorate the tops with royal icing designs and drizzle with caramel. Allow the icing to set before serving.
