Decadent Chocolate Peanut Butter Layer Cake
Ingredients:
– 2 cups all-purpose flour
– 1 3/4 cups granulated sugar
– 3/4 cup unsweetened cocoa powder
– 2 tsp baking powder
– 1 1/2 tsp baking soda
– 1 tsp salt
– 2 large eggs
– 1 cup whole milk
– 1/2 cup vegetable oil
– 2 tsp vanilla extract
– 1 cup boiling water
– 1 cup creamy peanut butter
– 1 cup heavy cream
– 2 cups dark chocolate chips
– Crushed peanuts for garnish
Instructions:
1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
2. In a large bowl, mix together flour, sugar, cocoa, baking powder, baking soda, and salt.
3. Add eggs, milk, oil, and vanilla to the dry ingredients and mix until well combined.
4. Stir in boiling water until the batter is smooth.
5. Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
6. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
7. In a saucepan, heat the heavy cream until it just begins to boil. Remove from heat and pour over the chocolate chips. Let it sit for a minute, then stir until smooth to make the ganache.
8. Place one cake layer on a serving plate and spread peanut butter over the top. Place the second cake layer on top.
9. Pour the dark chocolate ganache over the cake, letting it cascade down the sides.
10. Decorate the top with swirls of chocolate frosting and sprinkle with crushed peanuts.
