Crunchy Asian Slaw
Ingredients
2 cups shredded green cabbage
1 cup shredded red cabbage
1 cup shredded carrots
1 red bell pepper, thinly sliced
1/2 cup chopped cilantro
1/4 cup sliced green onions
1/4 cup roasted peanuts or cashews (optional)
2 tbsp sesame seeds (optional)
For the Dressing:
3 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or maple syrup
1 tsp grated ginger
Juice of 1 lime
Directions
In a large bowl, combine green cabbage, red cabbage, carrots, bell pepper, cilantro, and green onions. Toss to mix evenly.
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and lime juice until smooth.
Pour the dressing over the slaw and toss until everything is well coated.
Top with roasted peanuts and sesame seeds for an extra crunch.
Let the salad sit for 10 minutes before serving to allow the flavors to meld.
