Crispy Potato Latkes

Ingredients

4 medium russet potatoes, peeled and grated
1 small onion, grated
2 large eggs, lightly beaten
1/4 cup all-purpose flour
1 tsp salt
1/4 tsp black pepper
Vegetable oil, for frying
Sour cream and chopped green onions, for garnish (optional)
Directions

Grate the potatoes and onion, then use a clean kitchen towel to squeeze out as much moisture as possible.
Mix the potatoes, onion, eggs, flour, salt, and pepper in a large bowl until combined.
Heat about 1/4 inch of oil in a large skillet over medium heat.
Scoop 2-3 tbsp of the potato mixture and flatten it into a patty. Carefully place it in the hot oil.
Fry for 3-4 minutes on each side, until golden and crispy. Transfer to a paper towel-lined plate to drain excess oil.
Repeat with the remaining potato mixture, adding more oil to the skillet if needed.
Serve warm with sour cream and chopped green onions for dipping!
