Crispy Chicken Alfredo

Ingredients:

2 boneless, skinless chicken breasts

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

2 large eggs

2 cups fettuccine pasta

2 cups Alfredo sauce

1 tbsp butter

Fresh chives, chopped (for garnish)

Instructions:

1. Prepare the Chicken: Pound the chicken breasts to even thickness. In one bowl, whisk eggs, and in another bowl, mix breadcrumbs, Parmesan, garlic powder, salt, and pepper. Coat the chicken in egg, then breadcrumb mixture.

2. Cook the Chicken: Heat butter in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden and fully cooked.

3. Cook the Pasta: Boil fettuccine according to package instructions. Drain and toss with Alfredo sauce over low heat.

4. Assemble: Place the Alfredo pasta on a plate. Slice the crispy chicken and arrange on top.

5. Garnish and Serve: Drizzle extra Alfredo sauce over the chicken and pasta. Sprinkle with chopped chives.
