Crispy Chicken Alfredo

Ingredients:
For the chicken:
2 boneless, skinless chicken breasts
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/2 cup vegetable oil (for frying)
For the Alfredo sauce:
3 tbsp butter
2 garlic cloves, minced
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
For the pasta:
12 oz (340g) fettuccine pasta
Salt for boiling water
For garnish:
Fresh parsley, chopped
Instructions:
Prepare the Chicken:
Pound the chicken breasts to an even thickness. Season with salt and pepper.
Dredge each piece in flour, dip in beaten eggs, and coat with a mixture of breadcrumbs and Parmesan cheese.
Heat oil in a skillet over medium heat and fry the chicken until golden and crispy, about 4-5 minutes per side. Place on a paper towel-lined plate and let it rest before slicing.
Cook the Pasta:
Boil the fettuccine in salted water according to the package instructions. Reserve 1/2 cup of pasta water before draining.
Make the Alfredo Sauce:
In a large skillet, melt butter over medium heat. Sauté the minced garlic for about 1 minute until fragrant.
Add heavy cream and simmer for 2-3 minutes. Stir in Parmesan cheese and whisk until smooth. Season with salt and pepper.
Combine Pasta and Sauce:
Toss the cooked fettuccine into the Alfredo sauce, adding reserved pasta water if needed to adjust the consistency.
Assemble the Dish:
Plate the creamy pasta in a bowl, top with sliced crispy chicken, and drizzle additional Alfredo sauce over the top.
Garnish and Serve:
Sprinkle with fresh parsley for a pop of color and serve hot.
