Creamy Veggie Tortilla Roll-Ups
Ingredients
4 large flour tortillas
8 oz (1 block) cream cheese, softened
1/2 cup sour cream
1 cup shredded cheddar cheese
1/2 cup diced tomatoes (seeds removed)
1/2 cup finely chopped green onions
1/2 cup chopped bell peppers (any color)
1/4 tsp garlic powder
1/4 tsp paprika
Salt and pepper to taste
Directions
Make the Filling:
In a bowl, mix softened cream cheese, sour cream, cheddar cheese, garlic powder, paprika, salt, and pepper until smooth.
Add Veggies:
Fold in diced tomatoes, green onions, and chopped bell peppers. Mix until evenly combined.
Spread and Roll:
Spread the mixture evenly over each tortilla, leaving a small border around the edges. Roll each tortilla tightly.
Chill:
Wrap the rolled tortillas in plastic wrap and refrigerate for 1–2 hours to firm up.
Slice and Serve:
Cut each roll into 1-inch slices. Arrange on a platter and serve chilled.
