Creamy Tuscan Chicken Pasta
Ingredients
2 large chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper, to taste
1 cup heavy cream
1/2 cup chicken broth
1/3 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
2 cups baby spinach
8 oz spaghetti (or pasta of choice)
Directions
Cook the chicken: Season chicken breasts with garlic powder, paprika, salt, and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken for 5-6 minutes on each side until golden and cooked through. Remove from skillet and set aside.
Cook the pasta: Boil spaghetti according to package instructions. Drain and set aside.
Make the sauce: In the same skillet, lower heat and add chicken broth and heavy cream. Stir in Parmesan cheese until melted and creamy.
Add spinach & tomatoes: Toss in sun-dried tomatoes and spinach. Simmer for 2-3 minutes until spinach wilts.
Combine: Return chicken to the skillet and spoon the sauce over. Add cooked pasta and toss to coat.
Serve: Garnish with cracked black pepper and extra Parmesan. Enjoy warm!
