2 tsp olive or avocado oil
1 shallot, diced
2 garlic cloves, minced
2 cups cherry or grape tomatoes
1/2 cup roasted red peppers
1 tbsp tomato paste
1/2 tsp salt
1 tsp dried basil
1 tsp Italian seasoning
1/8 tsp black pepper
1 cup heavy cream
3/4 cup Parmesan cheese, divided
2 cups chopped spinach
3 cups cooked cheese tortellini
Directions:
1. Heat oil in a skillet over medium heat. Cook shallots and garlic for 3 minutes.
2. Add tomatoes and cook for 10 minutes until softened, pressing to release juices.
