Creamy Spinach-Stuffed Salmon

Ingredients:
For the salmon:
4 salmon fillets, skinless
Salt and black pepper to taste
1 tbsp olive oil
For the spinach filling:
2 cups fresh spinach, chopped
2 garlic cloves, minced
2 tbsp cream cheese
¼ cup grated Parmesan cheese
1 tbsp butter
Pinch of nutmeg (optional)
Instructions:
Prepare the filling:
Heat butter in a skillet over medium heat. Add garlic and sauté until fragrant.
Toss in the spinach and cook until wilted.
Stir in cream cheese, Parmesan, and a pinch of nutmeg for extra flavor. Mix until creamy and set aside to cool.
Stuff the salmon:
Using a sharp knife, cut a pocket in each salmon fillet, being careful not to slice through.
Fill each pocket generously with the spinach mixture. Secure with toothpicks if needed.
Cook the salmon:
Heat olive oil in a large skillet over medium heat. Season the salmon with salt and pepper.
Place the fillets in the skillet and cook for 4-5 minutes on each side, until golden brown and cooked through.
Serve and enjoy:
Remove toothpicks (if used) and transfer to a serving plate.
Pair with a fresh salad or roasted veggies for a complete meal.
