Creamy Shrimp Pasta
Ingredients:
For the Shrimp:
1 lb shrimp, peeled and deveined
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
Salt and pepper to taste
For the Pasta:
8 oz rotini or any pasta of choice
Salt for boiling water
For the Sauce:
2 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chicken broth
1/2 tsp paprika
1/2 tsp garlic powder
Salt and pepper to taste
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
Prepare the Shrimp:
In a large skillet, heat olive oil over medium-high heat. Season the shrimp with paprika, garlic powder, salt, and pepper. Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
Make the Sauce:
In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-4 minutes, allowing the sauce to thicken slightly. Stir in Parmesan cheese, paprika, garlic powder, salt, and pepper. Cook for another 2-3 minutes until the sauce is smooth and creamy.
Combine the Pasta and Shrimp:
Add the cooked pasta to the skillet with the sauce and toss to coat the pasta in the creamy sauce. Return the cooked shrimp to the pan and stir to combine.
Serve:
Serve the creamy shrimp pasta in bowls, garnished with extra Parmesan or parsley if desired.
