For the Shrimp:
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
1 tbsp lemon juice
For the Pasta:
1 lb penne pasta
2 tbsp olive oil
3 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup heavy cream
1 cup chicken broth
1 tsp dried basil
1 tsp dried oregano
Salt and pepper to taste
1 cup grated Parmesan cheese
For Garnish:
Fresh parsley, chopped
Extra Parmesan cheese
Instructions
Cook the Pasta: Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions. Drain and set aside.
Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Season the shrimp with garlic powder, paprika, salt, and pepper. Cook the shrimp for 2-3 minutes per side until pink and opaque. Remove from the skillet and set aside. Drizzle with lemon juice for extra flavor.
Make the Creamy Sauce: In the same skillet, add a little more olive oil if needed and sauté the minced garlic for 1-2 minutes until fragrant. Add the cherry tomatoes and cook for another 2 minutes. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-5 minutes, allowing the sauce to thicken slightly.
Combine the Pasta and Sauce: Add the cooked pasta to the sauce and toss to coat the pasta evenly. Stir in the Parmesan cheese, dried basil, oregano, salt, and pepper. Let the pasta simmer in the sauce for a few minutes to absorb the flavors.
