Creamy Shrimp & Mushroom Spaghetti

Ingredients

12 oz spaghetti
1 lb shrimp, peeled and deveined
1 cup mushrooms, sliced
1 1/2 cups heavy cream
1/2 cup grated Parmesan cheese
3 garlic cloves, minced
2 tbsp unsalted butter
1 tbsp olive oil
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions

Cook the pasta: Boil spaghetti in salted water until al dente. Reserve 1/2 cup of pasta water, then drain.

Sauté shrimp: Heat olive oil in a large skillet over medium heat. Season shrimp with salt and pepper. Cook for 2-3 minutes per side until pink. Remove and set aside.

Cook mushrooms: In the same skillet, melt butter. Add mushrooms and cook until softened, about 5 minutes. Add garlic and sauté until fragrant.

Make the sauce: Stir in heavy cream and Parmesan cheese. Simmer on low heat, stirring occasionally, until the sauce thickens.

Combine: Add the cooked pasta to the skillet and toss to coat. If needed, add reserved pasta water to reach desired consistency. Return shrimp to the skillet and mix gently.

Serve: Top with fresh parsley, a sprinkle of Parmesan, and freshly cracked black pepper. Enjoy warm!
