Creamy Shrimp Lasagna
A rich and creamy lasagna with layers of shrimp, cheese, and a smooth white sauce. Perfect for a special dinner!
Ingredients

For the lasagna:
12 lasagna noodles
1 lb shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
2 cups ricotta cheese
2 cups mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
2 cups heavy cream
1 cup chicken or vegetable broth
1 tablespoon flour
Salt and pepper to taste
Fresh parsley for garnish

Cook the Lasagna Noodles:
Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions, then drain and set aside.
Prepare the Shrimp:
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes until pink and cooked through. Remove from heat and set aside.
Make the Creamy Sauce:
In the same skillet, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for 1-2 minutes to form a roux.
Slowly whisk in the heavy cream and broth, and let the mixture simmer for 5-7 minutes until thickened.
Season the sauce with salt and pepper. Stir in 1 cup of mozzarella cheese and 1/4 cup of Parmesan cheese, allowing them to melt into the sauce.
Assemble the Lasagna:
Preheat your oven to 350°F (175°C).
In a baking dish, spread a thin layer of the creamy sauce on the bottom. Layer 3 lasagna noodles on top, then add a layer of the shrimp and some ricotta cheese. Repeat until all ingredients are used, finishing with a layer of sauce and the remaining mozzarella and Parmesan cheeses on top.
Bake:
Cover the lasagna with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until the top is golden and bubbly.
Serve:
Let the lasagna rest for 5-10 minutes before slicing. Garnish with fresh parsley and serve.
