Creamy Shrimp Alfredo Pasta
Ingredients:
12 oz fettuccine, 2 tablespoons olive oil, 1 lb shrimp (peeled and deveined), 3 cloves garlic (minced), 1 ½ cups heavy cream, 1 cup grated Parmesan cheese, 2 tablespoons unsalted butter, salt and pepper to taste, fresh parsley (chopped, for garnish), freshly ground black pepper (for topping).
Instructions:
1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
2. Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Season the shrimp with salt and pepper, then sauté for 2-3 minutes on each side, or until pink and fully cooked. Remove the shrimp from the skillet and set aside.
3. Prepare the Alfredo Sauce: In the same skillet, melt the butter and sauté the minced garlic for 1-2 minutes until fragrant. Reduce the heat to low and stir in the heavy cream. Gradually whisk in the Parmesan cheese until the sauce is smooth and creamy.
4. Combine Everything: Add the cooked fettuccine to the Alfredo sauce, tossing to coat evenly. If the sauce is too thick, add a splash of the reserved pasta water. Return the shrimp to the skillet and mix gently.
5. Serve: Plate the pasta and garnish with fresh parsley and freshly ground black pepper. Serve warm for a luxurious and delicious meal.
