Creamy Sausage & Butternut Squash Orzo Soup
Ingredients
1 lb (450g) Italian sausage, sliced
2 cups butternut squash, cubed
1 cup orzo pasta
3 cups baby spinach
4 cups chicken broth
1 cup heavy cream
1/2 onion, finely diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp fresh thyme (or 1/2 tsp dried)
Salt and pepper, to taste
Directions
Cook the sausage: In a large pot, heat olive oil over medium heat. Add sausage slices and cook until browned. Remove and set aside.
Sauté the veggies: In the same pot, add onion and garlic. Sauté until fragrant, about 2 minutes. Stir in butternut squash and thyme. Cook for 5 minutes, stirring occasionally.
Simmer the soup: Add chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes, or until squash is tender.
Cook the orzo: Stir in orzo pasta and cook for 8-10 minutes, until tender.
Finish with cream & spinach: Stir in heavy cream and spinach. Simmer for 2 minutes until spinach wilts. Return sausage to the pot. Season with salt and pepper.
Serve: Garnish with fresh thyme and serve warm.
