Creamy Sausage and Tomato Rotini

Ingredients

12 oz rotini pasta
1 tbsp olive oil
1 lb Italian sausage (mild or spicy), sliced
3 cloves garlic, minced
1 cup cherry tomatoes, halved (or 1 can diced tomatoes)
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper, to taste
Fresh basil or parsley, chopped, for garnish
Directions

Cook the Pasta: Boil a large pot of salted water and cook rotini according to package instructions until al dente. Drain and set aside.
Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned on all sides, about 5-6 minutes. Remove sausage from skillet and set aside.
Sauté Garlic and Tomatoes: In the same skillet, add garlic and cook until fragrant, about 1 minute. Add the tomatoes and cook for another 3-4 minutes, until they soften.
Make the Sauce: Lower heat and pour in the heavy cream. Stir in the Parmesan cheese until smooth and creamy. Season with salt and pepper to taste.
Combine Pasta, Sausage, and Sauce: Return the cooked sausage to the skillet, then add the drained pasta. Toss everything together until well coated in the sauce.
Garnish and Serve: Sprinkle with fresh basil or parsley, and enjoy warm!
