Creamy Salmon Pasta Salad

Ingredients

2 cups rotini or fusilli pasta (cooked and cooled)
1 cup cooked salmon, diced (fresh or canned works!)
1/4 cup red onion, finely chopped
1/2 cup cucumber, diced
2 tbsp fresh dill, chopped
For the Creamy Dressing:

1/2 cup Greek yogurt
1/4 cup mayonnaise
1 tbsp lemon juice
1 tsp Dijon mustard
Salt and pepper to taste
Directions

Cook the pasta: Prepare pasta according to package instructions. Drain, rinse with cold water, and set aside.

Make the dressing: In a bowl, whisk together Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth.

Combine ingredients: In a large bowl, mix cooked pasta, salmon, red onion, cucumber, and dill.

Toss with dressing: Pour the dressing over the pasta salad and gently toss until everything is well coated.

Chill and serve: Refrigerate for at least 20 minutes before serving. Garnish with extra dill if desired!
