Creamy Salmon and Shrimp Pasta with Spinach
Ingredients:
For the Salmon:
2 salmon fillets (6 oz each)
1 tbsp olive oil
1 tsp garlic powder
Salt and pepper to taste
2 tbsp grated Parmesan cheese
For the Pasta:
250g spaghetti or linguine
2 tbsp unsalted butter
2 garlic cloves, minced
1/2 cup heavy cream
1/2 cup chicken or vegetable broth
1/3 cup grated Parmesan cheese
1 cup fresh spinach leaves
1/2 cup cooked shrimp
Salt and pepper to taste
Instructions:
Cook the Salmon
Preheat your oven to 400°F (200°C). Season the salmon fillets with olive oil, garlic powder, salt, and pepper. Sprinkle Parmesan cheese on top. Place them on a baking sheet and bake for 12-15 minutes, or until cooked through and flaky.
Cook the Pasta
Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water.
Make the Creamy Sauce
In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in the broth and heavy cream, bringing it to a gentle simmer. Add Parmesan cheese and stir until the sauce is smooth and thickened.
Add Spinach and Shrimp
Stir in the spinach leaves and let them wilt in the sauce. Add the cooked shrimp and pasta, tossing to combine. If the sauce is too thick, add the reserved pasta water a little at a time to loosen it. Season with salt and pepper to taste.
Assemble and Serve
Plate the creamy pasta, and top each serving with a baked salmon fillet. Garnish with extra Parmesan and serve warm.
