Recipes:

12 oz rigatoni pasta
4 oz goat cheese, crumbled
½ cup dried cranberries
½ cup toasted pecans, chopped
2 cups arugula or spinach, chopped
1 tbsp olive oil
Salt and black pepper, to taste
For the Lemon Vinaigrette:
2 tbsp fresh lemon juice
1 tbsp Dijon mustard
2 tbsp honey
¼ cup olive oil
Salt and black pepper, to taste
Directions:
Cook the rigatoni pasta according to package directions, then drain and rinse with cold water to cool.
In a small bowl, whisk together the lemon juice, Dijon mustard, honey, olive oil, salt, and black pepper to make the vinaigrette.
In a large bowl, combine the cooked pasta, crumbled goat cheese, dried cranberries, chopped pecans, and arugula.
Pour the lemon vinaigrette over the salad and toss until evenly coated.
Season with additional salt and pepper to taste. Serve chilled or at room temperature. Enjoy!
