Description
1 French baguette, sliced into ½-inch rounds
2 tbsp olive oil
2 medium beets, roasted, peeled, and sliced thin
4 oz goat cheese, softened
¼ cup walnuts, chopped
1 tbsp honey
½ tsp sea salt
¼ tsp black pepper
1 tbsp balsamic glaze (for drizzling)
Fresh thyme leaves (for garnish)
Directions:
Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil.
Bake for 8-10 minutes, or until golden and crispy. Remove and let cool.
In a small pan over medium heat, toast walnuts for 2 minutes, then drizzle with honey and stir to coat. Remove from heat and set aside.
Spread a layer of softened goat cheese onto each crostini.
Top with thin slices of roasted beet and a sprinkle of honeyed walnuts.
Season with sea salt and black pepper, then drizzle with balsamic glaze.
Garnish with fresh thyme leaves and serve immediately. Enjoy!
