Creamy Ricotta Chicken and Orzo Skillet

Description

1 can (15 oz) chickpeas, drained and rinsed
1 cucumber, diced
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
½ cup Kalamata olives, pitted and halved
1 tbsp fresh parsley, chopped
For the Tzatziki Dressing:
½ cup plain Greek yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 garlic clove, minced
1 tsp dried dill
Salt and black pepper to taste
Directions:
In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, olives, and parsley.
In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, garlic, dill, salt, and black pepper until smooth.
Pour the tzatziki dressing over the salad and toss to coat evenly.
Serve immediately or chill for 30 minutes to allow the flavors to meld. Enjoy!
