Creamy Pumpkin Orzo with Sausage
Ingredients
1 cup orzo pasta
1 tbsp olive oil
2-3 Italian sausages, sliced
2 garlic cloves, minced
1 cup canned pumpkin purée
2 cups chicken or vegetable broth
1/4 cup heavy cream
1/4 cup grated Parmesan cheese (plus extra for garnish)
1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
Salt and pepper to taste
Directions
Cook the Sausage: Heat olive oil in a large skillet over medium heat. Add sliced sausages and cook until browned, about 5-7 minutes. Remove and set aside.
Sauté Garlic: In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Add Orzo & Broth: Stir in orzo pasta, then add chicken broth. Simmer for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Mix in Pumpkin & Cream: Stir in the pumpkin purée, heavy cream, Parmesan cheese, and thyme. Mix until the sauce is smooth and creamy. Season with salt and pepper to taste.
Combine & Serve: Add the cooked sausage back to the skillet and toss to combine. Garnish with extra Parmesan and thyme. Serve warm.
