Creamy Potato Bacon Soup
Ingredients
6 slices bacon, diced
1 medium onion, diced
3 cloves garlic, minced
4 cups potatoes, peeled and diced
3 cups chicken broth
1 cup heavy cream
1/2 cup sour cream
1/2 tsp dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions
Cook the diced bacon in a large pot over medium heat until crispy. Remove the bacon and set aside, leaving about 2 tbsp of bacon grease in the pot.
Sauté onion and garlic in the bacon grease until softened, about 3 minutes.
Add diced potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
Blend the soup with an immersion blender until smooth, or mash some of the potatoes for a chunkier texture.
Stir in heavy cream and sour cream. Heat gently but do not boil.
Top each serving with crispy bacon and chopped parsley before serving.
