Creamy Pasta Primavera Recipe
Ingredients:
12 oz pasta (farfalle, penne, or shells)
1 cup cherry tomatoes, halved (red & yellow)
1 cup snap peas, trimmed
1 cup bell peppers, chopped
2 tbsp olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup Parmesan cheese, grated
1 tbsp lemon juice
Salt & pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook the Pasta:
Boil pasta according to package instructions. Drain and set aside.
Sauté the Veggies:
In a large skillet, heat olive oil over medium heat.
Add garlic and cook until fragrant.
Stir in snap peas, bell peppers, and cook for 3-4 minutes.
Add cherry tomatoes and cook for another 2 minutes.
Make the Sauce:
Pour in heavy cream, stir, and let it simmer.
Mix in Parmesan cheese and lemon juice until creamy.
Season with salt and pepper to taste.
Combine Everything:
Add cooked pasta to the skillet and toss until fully coated.
Garnish & Serve:
Sprinkle with fresh parsley and extra Parmesan.
Serve warm and enjoy!
