Creamy Parmesan Orzo with Peas
Ingredients
1 cup orzo pasta
1 tbsp olive oil or butter
2 garlic cloves, minced
2 cups chicken or vegetable broth
½ cup heavy cream
½ cup grated Parmesan cheese
1 cup frozen peas (thawed)
½ tsp salt (or to taste)
¼ tsp black pepper
Optional: Fresh thyme or parsley for garnish
Directions
Toast the orzo: Heat olive oil or butter in a skillet over medium heat. Add the orzo and sauté for 2-3 minutes until lightly golden.
Cook the orzo: Add minced garlic and cook for 1 minute. Pour in the chicken or vegetable broth. Stir and bring to a simmer. Cook for about 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Make it creamy: Stir in the heavy cream, Parmesan cheese, and thawed peas. Cook for another 2-3 minutes, until the cheese is melted and the mixture is creamy.
Season: Add salt and pepper to taste.
Serve: Garnish with fresh thyme or parsley and serve warm as a side dish or a light main course.
