2 tbsp butter
1 lb mushrooms, sliced
1 tbsp butter
1 onion, diced
2 carrots, diced
2 celery stalks, diced
2 garlic cloves, chopped
1 tsp thyme, chopped
6 cups chicken broth
1 cup wild rice
1½ cups cooked chicken, diced/shredded
1 cup milk or cream
1 cup Parmesan cheese, grated
Salt and pepper
Directions:
1. Melt butter, cook mushrooms 10-15 mins. Set aside.
2. Add butter, cook onion, carrot, celery 8-10 mins.
3. Mix in garlic, thyme. Cook 1 min.
4. Add broth, rice, chicken, mushrooms. Simmer 20-30 mins.
5. Mix in milk, cheese. Season.
