Creamy Mushroom and Spinach Gnocchi
Ingredients
1 lb potato gnocchi (store-bought or homemade)
2 tbsp olive oil or butter
8 oz mushrooms, sliced
3 garlic cloves, minced
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 tsp red pepper flakes (optional)
Salt and pepper to taste
Directions
Cook Gnocchi: Boil the gnocchi in salted water according to package instructions. Drain and set aside.
Sauté Mushrooms: In a large skillet, heat olive oil or butter over medium heat. Add mushrooms and cook for 5-7 minutes until golden and tender. Add garlic and cook for another minute.
Add Spinach: Stir in the fresh spinach and cook until wilted.
Make the Sauce: Pour in the heavy cream and Parmesan cheese, stirring until the sauce thickens slightly. Season with salt, pepper, and red pepper flakes (if using).
Combine: Add the cooked gnocchi to the skillet, tossing to coat in the creamy sauce. Cook for 2-3 minutes to let the flavors meld.
Serve: Garnish with extra Parmesan and serve hot!
