2 lobster tails
2 tablespoons olive oil
1 small onion, chopped
1 carrot, chopped
2 cloves garlic, minced
4 cups water
For the Bisque:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup heavy cream
1 cup lobster stock
½ teaspoon paprika
Salt and black pepper to taste
Garnish:
Fresh parsley, chopped

Instructions:
Prepare the Lobster Stock:
Heat olive oil in a large pot. Sauté onion, carrot, and garlic until softened.
Add the lobster shells and water. Simmer for 20-25 minutes. Strain the stock and set aside.
