Creamy Lobster Bisque

Ingredients:
For the Lobster Stock:

2 lobster tails

4 cups water

1 carrot
(chopped)
1 celery stalk
(chopped)
1 onion
(chopped)
2 garlic cloves

1 bay leaf

1 tsp tomato paste

For the Bisque:

3 tbsp butter

2 tbsp all-purpose flour

1 cup heavy cream

1 cup milk

½ cup dry white wine

1 tsp paprika

Salt and pepper to taste

Chopped parsley
(for garnish)
Instructions:
Prepare the Lobster Stock:

In a large pot, bring water to a boil. Add the lobster tails and cook for 5 minutes until bright red
.
Remove the lobster tails, cool slightly, and remove the meat. Chop the meat into bite-sized pieces and set aside.
Return the shells to the pot with water. Add carrot, celery, onion, garlic, bay leaf, and tomato paste
. Simmer for 20-30 minutes, then strain the stock and discard solids.
Make the Bisque Base:

In the same pot, melt butter over medium heat. Whisk in flour and cook for 1 minute to create a roux
.
Gradually stir in the lobster stock, heavy cream, and milk, whisking constantly until smooth and thickened
.
Add Flavor:

Stir in white wine, paprika, salt, and pepper. Let the bisque simmer gently for 10 minutes
.
Finish with Lobster:

Add the reserved lobster meat to the bisque and simmer for 2-3 minutes until heated through
.
Serve and Garnish:

Ladle the bisque into bowls, garnish with chopped parsley, and serve hot
.
