Creamy Lemon Parmesan Pasta with Baby Spinach

Description

For the Stir Fry:
1 lb ground beef
1 tbsp olive oil
1 small red onion, diced
2 cloves garlic, minced
1 red bell pepper, chopped
1 zucchini, diced
½ cup cherry tomatoes, halved
½ cup kalamata olives, sliced
1 tsp dried oregano
½ tsp ground cumin
½ tsp smoked paprika
Salt and black pepper to taste
¼ cup crumbled feta cheese
2 tbsp fresh parsley, chopped
For Serving:
Cooked rice, quinoa, or warm pita bread
Tzatziki sauce or hummus (optional)
Directions:
Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess
fat if needed.
Sauté the Vegetables: Add the diced onion and garlic to the skillet, cooking for 2 minutes until fragrant. Stir in the bell pepper, zucchini, and cherry
tomatoes. Cook for another 5 minutes until the vegetables are tender.
Season the Stir Fry: Sprinkle in the oregano, cumin, smoked paprika, salt, and black pepper. Stir well to coat the in the seasoning.
Finish with Olives & Feta: Remove from heat and stir in the kalamata olives. Sprinkle the stir fry with crumbled feta cheese and fresh parsley.
Serve & Enjoy: Serve warm over rice, quinoa, or with warm pita bread. Add a dollop of tzatziki or hummus if desired.
