Creamy Lemon Chicken Ricotta Meatballs with Spinach & Garlic Chickpeas

Description

1 can (15 oz) chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cup fresh mozzarella pearls
1/4 cup fresh basil, chopped
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
In a large bowl, combine chickpeas, cherry tomatoes, mozzarella pearls, and fresh basil.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
Drizzle the dressing over the salad and toss gently to combine.
Serve immediately or refrigerate for 15 minutes to let the flavors meld.
