Creamy Garlic Shrimp Pasta

Ingredients
For the Pasta and Shrimp:
1 lb large shrimp, peeled and deveined
8 oz rigatoni or pasta of choice
1 tbsp olive oil
4 cloves garlic, minced
1 tbsp butter
1 tsp red pepper flakes (optional)
1 cup heavy cream
1 cup grated parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions, until al dente. Drain and set aside, reserving ½ cup of pasta water.
Prepare the Shrimp: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add to the skillet. Cook for about 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
Make the Creamy Garlic Sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the red pepper flakes, then pour in the heavy cream, stirring to combine. Let the cream simmer for 3-4 minutes until it thickens slightly.
Combine and Serve: Stir in the grated parmesan cheese and season with salt and pepper. Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add the reserved pasta water a little at a time to reach the desired consistency.
Finish the Dish: Add the cooked shrimp back into the skillet and toss everything together. Garnish with freshly grated parmesan and chopped parsley.
