Creamy Garlic Chicken with Broccoli

Ingredients

4 boneless, skinless chicken breasts
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 cup chicken broth
1/2 cup heavy cream
1 tsp Dijon mustard
1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)
Salt and pepper to taste
2 cups steamed broccoli
Cooked rice (for serving)
Chopped green onions (for garnish)
Directions

Season the chicken: Season the chicken breasts with salt and pepper on both sides.
Cook the chicken: Heat olive oil in a skillet over medium-high heat. Sear the chicken for 5-6 minutes per side until golden and fully cooked (165°F internal temperature). Remove and set aside.
Make the sauce: In the same skillet, melt butter. Add garlic and sauté for 1-2 minutes until fragrant. Stir in chicken broth, heavy cream, and Dijon mustard. Simmer for 3-4 minutes. For a thicker sauce, add the cornstarch slurry and cook until it thickens.
Combine: Return the chicken to the skillet, spoon the sauce over the top, and simmer for 2 more minutes to coat.
Serve: Plate the chicken with steamed broccoli and rice, drizzle with extra sauce, and garnish with chopped green onions.
