Creamy Garlic Cauliflower & Spinach Skillet
Ingredients
1 medium head of cauliflower (cut into florets)
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
3 cloves garlic (minced)
2 tbsp olive oil
Salt and pepper to taste
Directions
Cook the cauliflower: Heat olive oil in a large skillet over medium heat. Add cauliflower florets and sauté for 5-7 minutes until lightly golden and tender.
Make the sauce: Add minced garlic to the skillet and cook for 1 minute until fragrant. Stir in heavy cream and Parmesan cheese. Simmer for 3-4 minutes until the sauce thickens.
Add spinach: Toss in the fresh spinach and stir until wilted, about 2 minutes.
Season and serve: Season with salt and pepper to taste. Serve warm as a side dish or a light main meal.
