Ingredients

12 oz fresh cranberries
1 cup granulated sugar
1 medium apple, diced (e.g., Honeycrisp or Granny Smith)
1 cup seedless grapes, halved
1/2 cup crushed pineapple, drained
1 cup mini marshmallows
1/2 cup chopped pecans (optional)
1 cup heavy whipping cream
3 tbsp powdered sugar
1/2 tsp vanilla extract
Directions

Prep the cranberries: Finely chop the fresh cranberries in a food processor. Transfer to a bowl and mix with granulated sugar. Cover and refrigerate for at least 2 hours to let the cranberries macerate.

Whip the cream: In a separate bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

Combine the salad: Drain any excess liquid from the cranberries. In a large mixing bowl, combine the cranberries, diced apple, grapes, pineapple, mini marshmallows, and pecans (if using). Gently fold in the whipped cream until evenly mixed.

Chill and serve: Cover and refrigerate for at least 1 hour before serving to let the flavors meld. Serve chilled and enjoy this sweet and tart holiday salad!
