Creamy Chicken Tortellini with Asparagus & Bacon
Ingredients
1 lb chicken breasts, cut into bite-sized pieces
10 oz cheese tortellini
1 lb asparagus, trimmed
4 slices bacon, cooked and crumbled
1 1/4 cups heavy cream
1/2 cup chicken broth
3 garlic cloves, minced
1/3 cup grated Parmesan cheese
2 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper, to taste
Directions
Cook the tortellini: Boil tortellini in salted water according to package instructions. Drain and set aside.
Sauté the chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden brown and fully cooked, about 6-8 minutes. Remove and set aside.
Blanch the asparagus: In the same skillet, cook asparagus for 3-4 minutes until tender-crisp. Remove and set aside.
Make the sauce: Add minced garlic to the skillet and sauté for 30 seconds. Pour in chicken broth and heavy cream. Bring to a gentle simmer, then stir in Parmesan cheese until melted and smooth.
Combine: Return chicken, asparagus, and tortellini to the skillet. Toss everything together to coat in the creamy sauce.
Top with bacon: Sprinkle crumbled bacon on top before serving.
Serve: Plate the dish and enjoy with a sprinkle of extra Parmesan and fresh black pepper!
