Creamy Chicken Bacon Ranch Pasta
Ingredients:
12 oz penne pasta
2 tablespoons olive oil
2 boneless, skinless chicken breasts, diced
1 teaspoon garlic powder
1 teaspoon onion powder
1 packet (1 oz) ranch seasoning mix
1 ½ cups heavy cream
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
6 slices of bacon, cooked and crumbled
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the Pasta: Boil the penne pasta in salted water according to package instructions until al dente. Drain and set aside.
2. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season the diced chicken with garlic powder, onion powder, salt, and black pepper. Cook the chicken until golden and fully cooked, about 5-6 minutes. Remove and set aside.
3. Prepare the Sauce: In the same skillet, pour in the heavy cream and ranch seasoning mix. Stir until combined and bring to a gentle simmer. Add the shredded cheddar and mozzarella cheese, stirring until melted and the sauce is creamy.
4. Combine: Add the cooked pasta and chicken to the skillet, tossing to coat evenly in the creamy sauce. Stir in half of the crumbled bacon.
5. Bake (Optional): For a baked version, transfer the pasta mixture to a baking dish, sprinkle with additional cheese and bacon, and bake at 375°F (190°C) for 10 minutes or until bubbly.
6. Garnish and Serve: Top with the remaining bacon and fresh parsley before serving.
