Creamy Chicken and Broccoli Pasta
Ingredients:
2 chicken breasts, cubed
8 oz pasta (rigatoni or penne works well)
1 tablespoon olive oil
2 cloves garlic, minced
1 head of broccoli, chopped into florets
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 teaspoon red pepper flakes (optional)
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley (for garnish)
Extra Parmesan for topping
Instructions:
Cook the pasta:
Boil the pasta in salted water according to the package instructions. Drain and set aside.
Cook the chicken:
Heat olive oil in a large pan over medium heat. Season the cubed chicken with salt, pepper, and Italian seasoning.
Cook the chicken until browned and cooked through, about 7-8 minutes. Remove from the pan and set aside.
Cook the broccoli:
In the same pan, add the broccoli and cook until tender, about 5 minutes, stirring occasionally. Add a splash of water if needed to help steam the broccoli.
Make the sauce:
Add the minced garlic to the pan and cook for 1 minute. Then pour in the heavy cream and chicken broth, stirring to combine.
Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
Combine everything:
Return the cooked chicken to the pan and stir in the cooked pasta and Parmesan cheese. Toss until the pasta is coated with the creamy sauce and the cheese has melted.
Serve:
Garnish with extra Parmesan, red pepper flakes (if using), and fresh parsley.
