Creamy Cajun Chicken Alfredo
Ingredients
For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp Cajun seasoning
2 tbsp olive oil
For the Alfredo Sauce:
8 oz fettuccine pasta
2 tbsp butter
3 cloves garlic (minced)
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
1/2 tsp Cajun seasoning (optional, for extra spice)
Salt and pepper to taste
For Garnish:
Fresh basil or parsley (chopped)
Directions
Cook the chicken: Rub the chicken breasts with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and sear chicken for 4-5 minutes per side, until fully cooked. Remove and let rest, then slice into strips.
Cook the pasta: Boil the fettuccine in salted water according to package instructions. Drain and set aside.
Make the Alfredo sauce: In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute. Stir in heavy cream and bring to a gentle simmer. Gradually add Parmesan cheese, stirring until smooth. Season with Cajun seasoning, salt, and pepper to taste.
Combine: Toss the cooked fettuccine in the Alfredo sauce until fully coated.
Serve: Plate the pasta and top with sliced Cajun chicken. Garnish with fresh basil or parsley for a pop of flavor.
